1 egg 2 tsp baking powder
1/2 cup milk 1/2 tsp cinnamon
1/4 cup salad oil 1/2 tsp salt
1 1/2 cup flour 1 cup finely chopped apple
1/2 cup sugar
Preheat oven to 400 F.
Grease bottoms of 12 muffin pan cups.
Beat egg. Stir in milk and oil.
Mix remaining ingredients. Batter should be lumpy.
Fill muffin cups 2/3 full. Sprinkle with topping.
Topping:
1/3 cup broken nuts
1/3 cup brown sugar
1/2 tsp cinnamon
Bake 25-30 minutes or until golden brown.
Immediately remove from pan.
Yields 1 dozen muffins.
