Pizzelle

3 eggs 1 tsp grated lemon peel
3/4 cup sugar 1 3/4 cups flour
4 oz sweet butter, melted 2 tsp baking powder
2 tsp vanilla

Beat eggs and sugar until light yellow.
Add melted butter, vanilla and lemon peel.
Sift together flour and baking powder and fold in gently.
Heat pizzelle iron on both sides.
Brush lightly with butter and place about 1 Tbs of batter on
the iron. Cut off excess batter which oozes out.
Bake about 1/2 min. on each side or until golden brown.
Remove and cool on rack.
