Candied Yams

Preheat oven 350 F

3 large sweet potatoes, baked, peeled & cut into quarters
1/2 cup brown sugar
1/4 cup honey or maple syrup
1/3 can frozen orange juice concentrate
pinch salt & cinnamon
2 Tbs margarine
1/3 pkg miniature marshmallows

Combine all ingredients except yams and marshmallows.
Cook for about 5 min. on stove top to melt margarine.
Place yams in baking dish and pour mixture over them.
Place marshmallows evenly over yams and bake for about 30
min. or until bubbly hot.
May be covered and refrigerated or frozen before the
marshmallows are placed on top.
