Hummas

Process to a smooth paste in a food processor:
3 large cloves garlic, minced
1/2 cup fresh lemon juice
1 cup tahini paste

Add and process until smooth and almost fluffy:
1 cup water
6 cups canned chick peas, rinsed and drained
1 1/2 Tbs ground cumin
salt to taste

Transfer mixture to an earthenware bowl.
Pour and swirl over top with the tip of a knife:
3 Tbs fruity olive oil

Sprinkle top with paprika and garnish with lemon slices,
olives and mint leaves.
Serve with torn pieces of pita bread.
Makes 6 cups.
