Bruschetta

Combine in a bowl:
3 cups diced, seeded, peeled ripe tomatoes
5 Tbs chopped fresh basil
1 Tbs minced garlic
1/4 cup olive oil
salt and pepper to taste

Let marinate at room temperature for 45 minutes.

Spoon the mixture over:
6 thick (1/2 inch) slices toasted Portuguese bread

Serve with knife and fork as an antipasto or appetizer.
