Tomatoes à la Provincale

Preheat oven to 400 F

Cut 6 tomatoes in half cross wise
Sprinkle halves with salt & pepper

Blend the following in mixing bowl:
1 2 cloves mashed garlic
3 Tbs minced shallots
4 Tbs minced fresh basil and parsley
1/8 tsp thyme
1/4 tsp salt and pinch pepper
1/4 cup olive oil
1/2 cup fine dry bread crumbs

Fill each tomato half with spoonful of mixture.
Sprinkle few drops of olive oil on top.
Arrange tomatoes in oiled shallow roasting pan; do not crowd.
10 15 minutes before serving, place pan in upper third of
oven and bake until tender and tops are brown.
