Mary Marshall's Spinach Squares

2 pkgs frozen chopped spinach (cooked and well-drained)
2 cups cooked rice
2 medium onions, chopped, browned in olive oil
4 eggs
salt & pepper to taste
1 cup grated parmesan cheese
1 1/2 cups bread crumbs
1 8-oz pkg cream cheese

Grease 10 x 13 pan with olive oil.
Mix all ingredients except bread crumbs
Spread in pan, sprinkle crumbs on top.
Bake at 400 F for 20 minutes.
Cut into bite-size squares.
Can be frozen and reheated in heavy foil.
