Trim, split and wash 2-3 leeks per person.
Brown in 3 Tbs olive oil.
Season with salt & thyme.
Add: 1/3 cup consommé
1/4 cup brandy
Simmer until just tender.
Add juice of 1/2 lemon.
Correct seasoning.
Chill.
Dress with a little oil and lemon juice.
